bubbly

This year I had no interest in making sickly sweet elderflower cordial (a 2010 overdose perhaps?), so went straight for the bubbly.  I've made 2 batches now, and it really is my favourite all-time drink. It tastes like a wonderful, bitter lemony, elderflower fizz. with a kick! All from throwing elderflower heads, lemons, sugar and water in a bucket and ignoring it for a week. [just to add, it was our old nappy bucket too, well washed of course!] Then a pinch of yeast added when the wild yeasts didn't look quite strong enough. and a dash of vinegar.  Janu thinks it's pretty good too, but I wrest it back pretty quick!
